Mango Mawa Lassi

Ingredients:

  • Ripe Mango ๐Ÿฅญ 2 medium
  • Curd / Yogurt ๐Ÿถ – 1 cup
  • Sugar / Honey ๐Ÿฏ – 2 tbsp
  • Salt ๐Ÿง‚ – pinch of
  • Ice Cubes ๐ŸงŠ 6-8
  • Mango Cubes ๐Ÿฅญ – 4-6
  • Milk Powder – 1 cup
  • Milk ๐Ÿฅ› – 1/2 cup
  • Ghee ๐Ÿงˆ – 2 tbsp
  • Cashew Nuts – 6-8
  • Raisins – 10-12
  • Cherries ๐Ÿ’ – 2 (optional)

Method:

1. In a blender jar, add 2 fresh and ripe, peeled & roughly chopped mangoes, 1 cup of curd / yogurt, 2 tbsp of sugar / honey (adjust as per the sweetness of mangoes), pinch of salt and 6-8 ice cubes. Blend the ingredients together until you have a creamy smooth texture.

2. Now the most important step or you can say the twist that will give your simple lassi the perfect taste and feel of the Kolkata famous Esplanade wali Mango Lassi. Being a bong from Kolkata, can not imagine any mango lassi flavour other than my hometown one. This recipe itself comes in my mind from the craving of this particular lassi.

3. So, to get that perfect one, here I have used homemade mawa (khoya). You can use store bought mawa as well. But today I am going to share instant mawa recipe, which will hardly take 10-12 minutes.

4. Heat a pan on low flame. Add ghee to the pan. After few seconds add raw milk and keep on stirring. Mix it continuously for 10-15 seconds. When the milk starts boiling add the milk powder little by little and keep stirring continuously, so that no lumps can form. Keep the flame low in the whole process. Keep stirring and cook until the mixture comes together and does not stick to the sides. It will take max 6-8 minutes. When it’s done turn off the flame, take it out in a plate and spread it. Let it cool down completely in room temperature. Mawa is then ready to use.

5. Now to garnish exactly like the famous juice corner one, take a serving mug / glass. 1st add 1 tbsp of mawa as the base of the glass. Add the chilled & thick blended mango lassi. You can add more ice cubes if you want. On the top of it, again add 1 tbsp of mawa. Garnish with cashew nuts, raisins / cherry, mango cubes and enjoy..!! ๐Ÿฅญ๐Ÿนโฃ
