Mango Coconut Chia Pudding

Ingredients:

  • Coconut Milk – 1 cup
  • Riped Mangoes – 2
  • Chia Seeds – 1/4th cup
  • Maple Syrup / Honey / Sugar – 1(1/2) – 2 tbsp
  • Vanilla Essence – 1/4th tsp (optional)
  • Mango Cubes – 2 tbsp
  • Mint Leaves for garnishing (optional)

Method:

1. In a mixing bowl add coconut milk, chia seeds, maple syrup / honey / sugar and vanilla essence. Mix them well with a hand beater / spoon / fork thoroughly without any lumps. Cover the bowl with a cling wrap. Refrigerate overnight or at least for 3 to 4 hours. Beat the mixture once in between and again keep it in refrigerator.

2. Peel 2 mangoes, chop and blend it into a thick puree. Do not add any water. If mangoes are not that sweet, then you can add maple syrup / honey / sugar. Keep it in refrigerator.

3. Now lets start assembling the pudding. Take out the basic chia pudding and mango puree from the fridge. In a glass, create a layer of chia pudding and spread it with a spoon to make a even layer.

4. Now add the thick mango puree and make another layer. Repeat the process 1 or 2 times. Or you can assemble in your own way. Finally top it with cubed mangoes. Garnish it with mint leaves and cherries. Or you can add dry fruits as well. And your Mango Coconut Chia Pudding is ready to serve 💕
