White Butter or Makkhan

Happy Janmashtami everyone….May Lord Krishna enrich our life with all his blessings!! ๐Ÿ™ And what could be better than celebrating Lord Krishna’s Birthday by making his most favourite homemade โฃ ๐Œ๐š๐ค๐ค๐ก๐š๐ง โฃ Today I am really excited to share one of my most favourite recipe on this auspicious day ๐Ÿคฉ๐Ÿ˜‡ Churning butter and then making ghee (clarified butter) is the one recipe which I frequently make and love to prepare. It doesn’t contain any harmful trans fat, so I always prefer using homemade butter and homemade ghee in all my preparations.

Ingredients:

  • Milk Cream or Malai – collected and stored in freezer for 15-20 days (max 1 month)
  • Chilled Water – 500ml or as required.

Method:

1. In order to extract Malai (cream), boil the full cream cow milk in a pan. Remember do not stir while boiling the milk. Once it boils, turn off flame, cover and let it cool down in room temperature. Then put the milk pan in refrigerator for overnight. Next day you can see a very thick creamy layer formed all over the milk. Carefully separate and collect the cream in a air tight container and keep it in freezer immediately. Every time you collect cream, immediately keep the container in freezer. Here I have collected near about 500gms of Malai in 20days โคต๏ธ

2. The day you will decide to make butter, take out the container from freezer and leave it to reach room temperature. Then start churning the cream by using a hand blender. This is the most time consuming step, so have patience and keep churning ๐Ÿ˜„. Keep adding chilled water little by little in between. After 20-30 minutes, you will see butter globules start accumulating.

3. Now it’s time to separate Buttermilk from Butter globules. Churned or grind (for quick result ๐Ÿ˜œ) till the whole butter accumulates and releases all the milk and water from it.

4. When you see โคด๏ธ all the butter globules get smooth, comes together and releases all the water, then very gently take out the thick portion from the grider jar. Then lightly press it in-between your palms and collect all the creamy butter in a bowl.
